As busy moms, we sometimes don’t take the time to eat healthy meals because of a lack of planning and/or time. Although we are out & about with our child(ren) and often have a diaper bag or backpack filled with essentials for them, often we neglect to pack something nutritious for ourselves.

Enter the layered salad in a jar.

I love this homemade ‘salad to go’. This meal in a jar can be a terrific lunch or snack to have on hand. With a little planning on your next trip to the grocery store…you can have this delicious ‘fast food’ ready in the fridge for anytime.

Layered Salad In A Jar

Ingredients

- 1.5 cups corn, canned or frozen

- 1 bag of shredded carrot

- 1 bag of broccoli slaw, regular coleslaw, or salad mix of your choice

- Grape Tomatoes {optional}

- Cucumbers (optional}

- Olives {optional}

- Protein of choice: diced chicken, beef, pork, tofu, tuna or salmon.

Favourite salad dressing and small containers for storing the dressing.

5 mason jars or other suitable single serving containers.

Directions:

In clean mason jars, divide and layer vegetables in jars as follows: corn, shredded carrot, broccoli slaw, tomatoes, cucumbers and olives. Or use any combination of vegetables you like and leave out those you don’t! The protein is the last thing to add to the salad…and you can switch it up and do a few with turkey, a few with tuna or whatever you wish.

I suggest making enough salads for lunches for Monday to Friday so you have a healthy lunch in the fridge for every day of the week. These can be eaten a home or taken as lunch on the go and tucked into a diaper bag. Make more if you have a partner who would like them for lunch as well, or if you plan to eat more than 1 a day. {This recipe was adapted from a President’s Choice for layered salad.}
