This simple, nutritious filling adds a new twist to a classic weeknight favourite – and the leftovers are the ideal lunch.

Preparation Time: 5 min

Cooking Time: 20 min

 

- Dempster’s® 100% Whole Wheat Tortillas

- 2 tsp (10 mL) canola oil

- ½ cup (125 mL) sliced green onion

- 1 cup (250 mL) diced (1/4 inch/5mm) sweet potato

- 1 tbsp (15 mL) chili powder

- 1 (19 oz/540 mL) can black beans, drained and rinsed

- 1 cup (250 mL) salsa of your choice

- ¼ cup (60 mL) chopped fresh cilantro

- 1 cup (250 mL) grated cheddar cheese

 

HEAT oil in skillet over medium-high heat. STIR IN green onion and sweet potato COOK 2 minutes. STIR IN chili powder, salsa and black beans. COVER,REDUCE heat and SIMMER for 10 minutes or until sweet potatoes are tender.

 

DIVIDE mixture between tortillas; TOP with cilantro and cheese. FOLD in half.

TOAST tortillas in skillet until golden on both sides and cheese is melted.

 

SERVING SUGGESTION SERVE with salsa and low-fat sour cream.

TIP TRY replacing the black beans with pinto beans or chick peas.
