Dempster's Dinners Made Easy: Pulled Pork Baguette

fraction of the time; served on fresh baked baguettes with a fresh slaw
for a great dinner any time of year.

Cooking Time: 25 min

 

- Dempster’s® OvenFresh™ Baguettes, white or multigrain, baked, sliced in half horizontally and then crosswise

- 1 tsp (5 mL) canola oil

- 1 lb (500 g) pork tenderloin

- ½ cup (125 mL) BBQ sauce of your choice

- ½ cup (125 mL) apple juice

- 1 cup (250 mL) each shredded cabbage and carrots

-½ cup (125 mL) corn niblets

- 2 tbsp (30 mL) low-fat mayonnaise

- 2 tbsp (30 mL) fresh chopped parsley (optional)

 

PREHEAT oven to 400?F (200?C).

HEAT oil in ovenproof skillet over medium-high heat. BROWN pork. BRUSH with BBQ sauce and ROAST in preheated oven for 10 minutes. POUR IN juice and COOK for an additional 10-15 minutes or until the internal temperature of the meat reaches 170?F (77?F).

TOSS cabbage, carrots, corn, mayonnaise and parsley in bowl and SET ASIDE.

USE knife and fork to pull/shred pork. PLACE back in skillet and COMBINE with remaining sauce. DIVIDE evenly between baked baguette halves and TOP with slaw.

Pork tenderloin can dry out quickly because it is so lean. Do not overcook and let it absorb up all the sauce before serving on the baguette.
