Veggie Chili for Cold Winter Nights

Here is a great recipe from Lianne; healthy chili to keep you and your family warm on cold winter nights!

 

Veggie Chili

1 clove garlic

1 onion chopped

1 tbsp olive oil

1 small eggplant or zucchini

1 small or ½ large cauliflower

1-2 medium carrots, chopped

½ red pepper, chopped

Handful shitake mushrooms and/or handful button mushrooms

1 tsp chili powder

1 can kidney beans

400g/14oz tinned chopped tomatoes

3 tbsp chopped parsley
